Time: 1 to 1.5 hours. Thanks to Fi for sharing this delicious recipe. The best chutney you’ll ever make or taste! I’m keeping experimenting to try and get it as I remember it.
Method
Marrow should be weighed after peel and seeds have been removed.
Cut into cubes.
Put in pan with sugar, stir, and simmer to a pulp.
Then add garlic and chillies, ginger well bruised and tied n muslin, salt and vinegar.
Boil gently until mixture is quite thick.
Remove the ginger.
Bottle and cover when cold.
Ingredients
4 lbs vegetable marrow
2oz whole ginger
4 lbs preserving sugar
2 oz garlic
1/2 oz dried red chillies
2 oz raisins
1 1/2 oz salt
1 breakfast cup vinegar
Notes: I’m making this Jan 24. Using a pumpkin – rather than a marrow. Accidentally included 2oz fresh red chillis – rather than 1/2oz. Had removed most of the seeds tho. Added the vinegar at the start as was worried it looks too dry with just the cubes and the sugar.
Didi says the first time Mouse made this she put in way too much chilli – but it does need more chilli than the recipe says. Helen thinks it needs more ginger too.
MARROW CHUTNEY TAKE 2
7 Nov 24. Made the marrow chutney again. Was on the phone, so couldn’t look up recipe so winged it. Nice result. V sticky! Here goes:
1 largish marrow
2 bags granulated sugar (1kg)
1 bottle malt vinegar (568ml)
Raisins (200g?)
3 dried chillis cut into quarter inches with seeds
2 pieces of ginger root the size of 2 largish fingers grated
5 little garlic cloves grated
2 onions chopped up
Put all in large heavy pan at the same time.
Gradually heat. When all sugar dissolved cook on medium heat occasionally checking in to stir it, until it looks a bit jam like. Put in warmed jars. Put lids on while contents still hot.
BUTTERNUT SQUASH CHUTNEY
Closely based on the above , this time (10 Nov 24) I did this. Nice a bit less sweet. But still sweet and a little bit sticky.
1 large butternut squash chopped into cubes
2 onions chopped
4 med cloves garlic grated
3 heaped teaspoonfuls ginger powder
Approx 250 ml vinegar
Approx 600 g granulated sugar
1 tomato chopped
3 apples chopped
Approx 200 g raisins
3 dried chillies with seeds cut into quarter inch pieces
Put all in pan. Heat slowly til sugar dissolves. Heat on medium til looks good. Aim squash a little translucent, mixture a bit jam like.
