Gooseberry bar le duc

This is delicious with the dog, and with cheese, and on toast instead of jam. Perhaps with Philadelphia. Really delicious… and scrumptiously made by Fi

Method

Choose gooseberries that are just turning colour. Top and tail. Put in the preserving pan with the vinegar and half the sugar. Stir for about 20 mins stirring frequently. Then add the remainder of the sugar. Cook for a further 30 mins and cook until the mixture is a syrupy consistency.

Tip! Keep stirring so that it doesn’t catch on the bottom

4 lb preserving sugar

½ pint brown vinegar
