Apricot jam from dried apricots

Mouse used to make this and it’s delicious, lovely, says Didi.

Method

Quarter the apricots with scissors and soak for 48 hours or more.

Add sugar and boil until juice sets.

Put in pots.

Ingredients

1 lb dried apricots

6 pints of water

6 lbs of preserving sugar

P.S. Helen tried this recipe May 2023. Two things: firstly the quantity calls for an actual preserving pan; secondly I think that’s way too much water (what do you think?).
