Pesto (alternative)

If you feel like foraging you can use ransoms (aka wild garlic). Didi makes this pesto with a bag of rocket. You can make it with ransoms or mazuma.

Method

Blend all the ingredients in food processor. (You can use a pestle and mortar if you want a bit of slow-time cooking).

Tip!

Serve with: Serve on any pasta. Nice with seafood, eg scallops or prawns etc.

Memory: Didi says a good place to go foraging for ransoms is in forests. They look like lily of the valley leaves. DO NOT eat lily of the valley though. You can eat ransom flowers too. You can wilt ransoms with oil and butter, serve with parmesan and pasta.

100 grams mazuma leaves washed and chopped

2 tablespoons pine nuts (sunflower seeds as alternative)

1 garlic clove crushed

½ teaspoon wasabi

½ teaspoon salt

4 tablespoons of extra virgin olive oil
