Orange cake

Elizabeth was Bobo’s niece. His sister Elsie had a daughter called Elizabeth.

This is Elizabeth’s cake, which Didi and Co used to enjoy when younger.

Method

Cream butter and sugar, beat in eggs, and fold in flour. *

(Or zap everything in a Magimix or similar).

Add the grated orange rind.

Line tin with greaseproof paper.

Put in a square tin.

And bake at 350 Fahrenheit for 20 mins.

Take out of the over and quickly pour over the juice of the orange and the 1 tablespoon of sugar. A little extra sugar can be scattered over the top.

Allow to cool and cut into pieces.

Memory: Didi used to have it as a child. Elizabeth used to cook it, and so did Puss and Mouse. Didi thinks that possibly it was a trendy recipe at the time (eg the 1950s) adding fresh fruit.

4 oz sugar

4 oz self-raising flour

2 eggs

1 large orange

1 tablespoon of sugar
